As a child I remember that my mother was always busy working in her garden. It was filled with lush red cherries and cherry tomatoes so juicy and sweet that I could pick them right off the bush and eat them. I would eat so many of these delicious, succulent red balls that my mouth would start to feel the pain of the acid in the tomatoes. She grew everything from a variety of vegetables so tasty to flowers so beautiful they took my breath away. I couldn't wait for spring to arrive, just to help her tend our summer gardens. The types of gardens I plant are flowers, vegetables and herbs. There are plants that love to reside in the shade and plants that love the sun. One of the trendiest gardens to plant is the Salsa garden. The vegetables needed in these beds are the first cherry tomatoes for their sweet and juicy taste, also tricolor, red, yellow and green peppers are added. According to tradition, you need to add the Jalapeño pepper to your garden for its spicy bite. Last but not least is coriander which adds the authentic flavor to any sauce. At the beginning of March I wait for the snow-covered winter ground to melt and for the days to warm up very slowly with the spring weather. With each passing day I see the pale spikes of green fingers slowly making their way through the dead foliage left over from the cold, cruel winter. The trees are also showing signs of spring with their buds covering the trees and bushes, in a few long weeks the buds will start to appear and show the first signs of spring. This delicious herb is mainly used in Italian cuisine; It wouldn't be Italian if I didn't add basil. Fresh herbs add so much more flavor to a dish and are a healthy alternative to salt. Some of the other herbs I plant for their flavor are rosemary, sage, parsley, thyme, chocolate mint, coriander. Planning, planting, and caring for my gardens may be a full-time job, but it's a loving habit that I look forward to every day. I try to plant a new perennial every season, this type of flower comes back every year and often multiplies. I usually divide these plants year after year and have many varieties without having to spend a lot of money to grow your own gardens. I like to include annuals too; these do not return every year but add beauty and variety to my large flower collection.
